A sinfully nutritious way to start your day

Breakfast. They say it's the most important meal of the day, but for most of us it can also be the most rushed. Of course on weekends and holidays it's beautiful to spend time cooking a more involved breakfast, but for everyday life we need things to be fast, easy and nutritious.

These quick soaked oats are ready in just a couple of minutes, portable (great if you like to eat breakfast at work or on the go) and full of goodness, as well as tasting amazing. If you're not already into oats then you're missing out as they have a whole plethora of health benefits, are super versatile and also incredibly cheap.

Begin your day with an antioxidant packed power bowl

Oats are full of antioxidants, vitamins and minerals – from magnesium, iron and zinc to vitamin B. Oats stabilise your blood sugar, so you'll stay full and won't crash after a couple of hours, which can happen with a sugar loaded cereal for breakfast. They're gluten free and also good for your digestive tract, as well as being packed with fibre. 

Depending on the type of oats you use you may want to soak them for a longer or shorter time. Personally I like mine to not be too smooth so I don't over soak them. My morning routine includes 30 minutes of yoga first thing, so I normally wake up, combine the ingredients and leave in the fridge until I am ready to eat. In the winter hot oatmeal is delicious, but for warmer seasons I prefer a cooler bowl. You can make this up the night before if you like, or in the morning. The rolled oats I use I like best with an hour of soaking.

A note on the milk – any sort of milk will work, and if you want you can replace some of the milk with water, useful if you are counting calories. I used coconut milk, depending on what you use you may want to add a sweetener.

Cacao, Blueberry and Banana Oat Bowl

Ingredients 
Serves 1
Ready in under 5 minutes, plus soaking time.

1/2 Cup Rolled Oats
100ml plant milk
1 Teaspoon Cacao Powder
3/4 Cup Frozen Blueberries plus extra to top
1 Banana, sliced
Chopped Almonds
Drizzle of vegan chocolate sauce (optional)

Method
In a bowl combine the milk and cacao powder, stirring until smooth. Add the oats and blueberries, stir to combine, cover and leave in the fridge until ready to eat.

Your morning breakfast treat awaits

Top with sliced banana and almonds and a little drizzle of vegan chocolate sauce if you like. Naughty but very, very nice….
